Colorful and moist cupcakes with tasty frosting. Cream cheese is easy to make and it is perfect for frosting cupcakes as it holds its shape for piping. You can use cream cheese with its natural light color, or make it more fun and color it in different shades


for 7 cupcakes

Kefir – 75 g
Sunflower oil – 65 g
Egg – 1 pc
Sugar – 85 g
Flour – 100 g
Cocoa – 5-7 g
Baking powder – 2 g
Baking soda – 0,5 g
Salt – 0,5 g
Red food coloring


1. Preheat oven to 180C
2. Mix food coloring into kefir to get the intense red color, leave it for 10-15 min

3. Meanwhile, beat the egg until light and fluffy, add kefir and oil, mix until fully combined
Slowly sift in dry ingredients (sugar, flour, cocoa, baking powder, soda, salt, and vanilla) and mix until just combined. Leave it for 20 min

4. Fill 2/3 of each cupcake mold (I used paper cups) with the dough
5. Bake for 15-20 min until a dry wooden toothpick inserted into the center of a cupcake comes out clean
6. Remove from oven, transfer cupcakes to a wire rack and let them cool down


Cream cheese (Philadelphia, Mascarpone or similar) – 150 g
Whipping cream – 50 g
Icing sugar – 50 g


1.Beat cooled whipping cream, cream cheese, and icing sugar until frosting is smooth and well combined
2. Add food coloring if needed
3. Spoon frosting into a piping bag fitted with a closed star nozzle
4. Pipe the frosting on top of each cupcake

For decoration, you can use fresh berries, sprinkles, dusting sugar and whatever your imagination will come up with
