Chocolate & Coffee Cupcake

NICE TO KNOW

Cupcakes with the taste of freshly brewed coffee and fine dark chocolate with whipped dark chocolate ganache frosting
These cupcakes have a rich and balanced taste and will be appreciated by all chocolate and coffee lovers

CUPCAKES

for 10 cupcakes

Softened butter – 50 g
Sugar – 100 g
Eggs – 1 pc
Flour – 100 g
Baking soda – ½ teaspoon
Cocoa powder – 25 g
Strong coffee – 55 ml
Crème Fraiche – 60 g

PREPARATION

1. Preheat oven to 160C
2. In a bowl of a stand mixer beat the butter and sugar until light and fluffy
3. Beat in eggs one at a time and mix until fully combined
4. Mix 55 ml of freshly made strong coffee with Crème Fraiche
5. Mix together flour, cocoa powder, and soda
6. Slowly sift in dry ingredients and coffee mixture into the dough and mix until just combined
7. Fill 2/3 of each cupcake mold ( I used paper cups) with the dough

7. Bake for 20-25 min until a dry wooden toothpick inserted into the center of a cupcake comes out clean
8. Remove from oven, transfer cupcakes to a wire rack and let them cool down

WHIPPED GANACHE FROSTING

Dark chocolate 64% – 36 g
Whipping cream (1) – 73 g
Whipping cream (2) – 36 g

PREPARATION

1.Pre-melt chocolate using a microwave or bain-marie
2. Pour whipping cream (1) into a saucepan and warm it up to 70-80C (do not let it boil)
3. Pour warmed whipping cream over the chocolate, let it sit for 2 min, and then mix them until incorporated
4. Add cooled whipping cream (2) and process ganache with a stavblender until smooth
5. Transfer ganache into a fridge for 8-12 hours to stabilize
6. After, use a mixer to beat the cooled ganache until firm peaks
7. Spoon frosting into a piping bag fitted with a closed star nozzle
8. Pipe the frosting on top of each cupcake

For decoration, I used meringue, dark chocolate feathers, and sprinkles
